Today’s modest – yet very delicious dinner is: roasted salmon with potato salad and lettuce salad sides.
Salmon is not a food that is widely popular here in Bulgaria, and it only became a thing few years ago. Yet, as I found out, this is my favorite fish to have in any form and moreover it is quite easy to cook.
Tonight, I roasted it with whole grain mustard and lemon slices.
Products you will need:
- Salmon fillet
- 2-3 large lemons
- Whole grain mustard
- Potatoes
- Leek
- Head of lettuce
- A tomato
- Green onion
- Cucumber
- Sunflower oil
- Salt
- Black pepper
- Vinegar
- Loooooooooveeee
How exactly did I do that? First I bought a nice big piece of salmon fillet from a show that sells very nice and fresh fish in all varieties. Then I split that in pieces, as even and equal to one another as possible. Put them skin down in a pan covered with baking paper. Slice an entire lemon in very thin slices, and star covering the fish with a thin layer of whole grain mustard. When you are done doing that put some sea salt on it, as well as some crushed black pepper and finally cover the fish completely with the lemon slices. When done, sprinkle some type of oil on top, it could be any kind you like – I used sunflower, and add a quarter cup of water.
Put the pan with the fish in a preheat oven and roast until the lemon slices start getting brown. Remove lemon slices from the fish, but still keep them in the pan, and continue roasting for another 5 minutes. You will know the salmon is ready when it is easily split-able with a fork.
For the potato salad – boil as much potatoes as you need, whole with peels on. After they are boiled , cool down and peel them. Cut into cubes, add finely sliced leek, add salt, the juice of one large lemon and some oil, again the choice is yours – and mix well. It is delicious.
Finally I decided to add a lettuce salad as another side. For the lettuce salad I used one head of lettuce, add some green onions to it, finely chopped, one tomato cut into cubes, one cucumber – sliced. Spices you will need on that are salt, vinegar (I used apple vinegar) and some oil.
