My Day-off extravaganza tomato sauce spaghetti

Once upon a time, when I would go to school and that was were my responsibilities ended, I would have half a day to my own easily. During that time, because of my love for pasta (of any sort), I learnt how to make the best tomato sauce to go with spaghetti and I would eat them watching movies in the winter afternoons. It has been years since I made  my first tomato sauce, and I dare to say that I have managed to improve it in time.

How can you make your own?

You will need:

  •  4 large fresh tomatoes (or a jar of chopped tomatoes)
  • One big onion
  • 2 cloves of garlic
  • black pepper
  • salt
  • red pepper
  • grind red hot chilly peppers (ha-ha)
  • oregano
  • savory

First thing you need to do is put water for your spaghetti on the stove until it boils. While you are waiting for that, chop your onion finely and put the wok (don’t judge! ) on the stove as well with some olive oil in (or in my case I used sunflower). Add the onions in the heated pan and once they are soft and almost see through, add your diced tomatoes. Let is boil until the water from the tomatoes is almost evaporated and add your spices: lots of black pepper, a table spoon of salt, lots of the savory and oregano, a table spoon of the red pepper, and a pinch of the hot peppers (we bought our own dried peppers and grind them in our coffee grinder –  see below).

Mix everything together and leave on medium heat until almost all the tomato water is gone. Add your finely diced cloves of garlic.

Once your spaghetti is boiled to your liking, remove the water and add them in the wok with the tomato sauce mix well and serve!
